August Ful Mudammas

A dear friend made this for me once and I will never forget it because it was the heartiest breakfast dish. Mornings are so special to me but making someone Foul is an act of love. This is so easy to make and a perfect breakfast alongside Palestinian taboon flatbread (or similar).

Ingredients
- Fava beans
- 2 garlic cloves
- 2 jalapeños (1 for mixing, 1 for topping)
- 1 lemonOlive oil
- 1 tomato (diced)Parsley (chopped)
- 1 tomato, cucumber, onion, and olives (for serving)
- Fresh/hot Taboon or similar flatbread
Kitchenware
- Cooking pan
- Knife an da cutting board
- Wide serving bowl
Steps
- Prepare the fava beans: Heat fava beans in a pan. As they heat, mash with a fork. Season with salt and mix well.
- Make the garlic-jalapeño mix: Mash garlic, 1 jalapeño, and lemon juice in a mortar and pestle. Pour over the beans while they cook.
- Add flavor: Stir in olive oil for richness.
- Garnish: Top the beans with diced tomato, parsley, and a fresh jalapeño slice.
- Prep veggies: Dice tomato, cucumber, onions, and olives.
- Serve: Place the fava beans in a wide, low-rim bowl. Arrange the diced veggies on one side and the beans on the other. Serve alongside fresh Taboon or flatbread.
